Preheat the oven to 180 degrees. 2. Place the noodles into a heat resistant bowl and pour over boiling water and set aside for 10 minutes. 3. Place the chickpeas onto a baking tray and cook for 5 minutes, set aside and allow to cool. 4. In another bowl place the sweet chili sauce, orange zest, orange juice, lime zest, lime juice, garlic and ginger together. Mix well and set aside (water may be needed to loosen the sauce). 5. Slice the cucumber, carrot, red pepper, spring onion and coriander. Place into a bowl. 6. Drain the noodles and place under cold water, drain well and add the chickpeas and noodles into the bowl. 7.
