METHOD 1. Heat the oil in a pan and then add the onions and cook until tender. 2. Add the garlic and ginger to the pan and cook for a couple more minutes with the onions. 3. Add the spices to the mix and continue to cook for a few more minutes - be careful not to burn the spices! 4. Then add the lentils and mix well. 5. Add the chopped tomatoes and coconut milk and bring to the simmer. 6. Add the vegetable stock and water and cook until the lentils are soft and reach the correct consistency. 7.
